We can create custom multi-stage aging processes to naturally tenderize your steaks to perfection. By exposing a beef sub-primal to oxygen, the natural enzymes within the meat to work, breaking down the molecular bonds of meat increased tenderness and natural flavor in every steak. Our high-capacity, humidity-controlled aging rooms utilize fan ventilation for consistent drying and ultraviolet lighting systems for controlling microbial levels.
Safety begins on the farm with the proper care, handling and nutrition of the animals by our family ranchers and vendor partners, and continues in our processing and packaging facilities and our driving program, all the way to your doorstep.
Corfini’s quality control team diligently follows the federal regulations for foodservice distribution and our team is trained, tested, and certified in the USDA Hazard Analysis and Critical Control Point (HACCP) system. SP Provisions was founded in 1880 to service the needs of the Southern Pacific Railroad. The Kunz family preserved the ideals of quality, service and integrity for over four generations, and have always been committed to connecting local farmers to local communities.

Del Monte Meat Company opened in downtown San Francisco in 1926. An Italian immigrant, Frank DeBenedetti expanded Del Monte meats into Washington, Oregon, and Idaho. Utilizing vertically-integrated production of beef, pork, and lamb along with hot dogs and hams, Del Monte grew to be the largest independent foodservice distributor on the West Coast, always doing business by “Service our Motto, Quality our Brand.”

Hamilton Meats was founded by Homer Hamilton in a modest building in central San Diego in 1932. Hamilton’s commitment to time-honored butchery techniques remained unchanged throughout the growth of the company and two more generations of leadership. Family owned and locally operated since 1950, Majestic Meat Co. has had a long history of providing Utah’s restaurants with some of the finest meat available. Sheldon & Sally Burt took charge of the company in 1987, and son-in-law Ray Zaelit purchased Majestic in 2004. Treating customers and staff like family is part of our culture.

Crown Meat & Provisions was formed in 1992 with six employees and two trucks. Eventually purchasing a 5,000 square foot building, the company created a custom-built, climate-controlled dry-aging room, bringing back dry-aged beef from the golden age of dining. and we will continue to uphold the high standards of quality that we were founded upon over 30 years ago.
